Hi, I’m Abby, the voice behind Simply Count It All Joy. I’m a health educator who helps families cook nourishing food, simplify their homes, and rediscover joy in everyday life.
This blog springs from my journey—getting back to the basics and discovering simple joy through simpler living.
My Background in Health Education
Early in life, the Lord placed a passion for health and education on my heart. I pursued that calling by earning a B.S. in Health Education. Over the years, I went on to earn a M.Ed. and K-12 teaching certifications, and have pursued extensive postgraduate studies in holistic nutrition and root-cause wellness.
That background shapes the way I approach food and daily habits here on the blog—translating health education principles into practical routines for everyday family life.


Simple Food
Food is at the heart of the home, and over the past several years I’ve been refining the way I cook to maximize both nutrition and simplicity. Because of my background in health education, I’ve spent many years studying how everyday food choices affect long-term health.
There are many voices online talking about cooking for health and healing, but my focus is a little different. I want to show that nutritious food can also be easy, delicious, and realistic for everyday life.
This blog is where the rubber meets the road—turning the principles of holistic nutrition and health education into simple recipes and kitchen rhythms that busy families can actually maintain. I truly believe the more nutritious food is, the more delicious it should be.
Despite what many people assume, cooking from scratch doesn’t have to be complicated. With a few simple systems, it can often be easier than relying on processed convenience foods.
Over time I’ve discovered shortcuts that make scratch cooking both manageable and enjoyable, and I love sharing them with others.
I’m continually learning more about eating for optimal health and healing, and I love sharing what I learn through simple recipes and practical kitchen rhythms for everyday life.

Simple Home
As a teacher and homeschool mom for many years, I spent a lot of time creating routines and systems that helped our home run with less stress and more order.
Over time I discovered that a handful of simple habits can save an incredible amount of time, stress, and mental energy during busy weeks.
Here you’ll find simple ideas for:

- cleaning routines
- managing daily household rhythms
These small systems require a little effort at the beginning, but they create more freedom and breathing room in everyday life.
My hope is that together we can transform the responsibilities of maintaining a home into something more meaningful—creating spaces filled with peace, purpose, and joy.

Faith can sometimes become complicated with rules and traditions. I try to keep this area of my life simple by keeping the main thing the main thing—relationship, not religion.
