Freshly Milled Chocolate Chip Cookie Recipe

Ingredients
  

  • 2 1/2 cups flour (soft white, spelt or combo) (300 grams)
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup butter (227 grams)
  • 1 1/2 cup sugar (sucanat, cane sugar, ...) (210 grams)
  • 2 tsp pure vanilla extract
  • 2 eggs
  • 1 cup milk chocolate chips or cut up chunks (170 grams)

Equipment

  • 1 Electric mixer
  • 1 Rubber spatula scraper
  • 1 Cookie sheet (with air pocket)
  • 1 Cookie dough scooper
  • 1 Spatula
  • 1 Wire cooling rack

Method
 

  1. Preheat oven to 350 degrees.
  2. Combine dry ingredients in a separate bowl: flour, baking soda and salt.
  3. In stand mixer (or main mixing bowl) combine at medium speed: butter, sugar, and vanilla until creamy and fluffy.
  4. Continue mixing on medium while adding eggs.
  5. Turn mixer to low speed and add dry ingredients. Turn back to medium after initially blended to fully mix together.
  6. Turn mixer to low and add chocolate chips.
  7. Scoop cookie dough into 1 inch balls onto ungreased cookie sheet.
  8. Bake for 12 minutes.
  9. Cool on baking racks.
