Sourdough Discard Bread Machine Bread

Recipe combining freshly milled wheat, sourdough discard, and a bread machine. Super easy and super delicious!

Ingredients
  

  • 1 cup warm water
  • 1/3 cup olive oil
  • 1/3 cup honey
  • 2 tsp salt
  • 1 egg
  • 100 g sourdough starter (About 1/2 cup)
  • 500 g Freshly milled flour (About 4 cups) (Check after kneading. If dough is sticking to sides of pan, add 25-50 g more flour.)
  • 1 tbsp yeast (Use a little less if your starter is really active & bubbly.)

Equipment

  • 1 Bread machine
  • 1 Measuring cups set
  • 1 Measuring spoons set

Method
 

  1. Place first 6 ingredients in bread machine pan.
  2. Add flour on top of other ingredients.
  3. Add yeast by creating a slight well on top of flour so it doesn't touch wet ingredients.
  4. Set bread machine to "wheat bread" or with the following custom settings:
    Rest: 25 min.
    Knead: 20 min.
    Rise 1: 45 min.
    Rise 2: 35 min.
    Bake: 1 hour
    Keep warm: off
